A restaurant has two different air systems: the dining room air conditioning, which moves conditioned air for the diners, and the kitchen extraction, which removes smoke and grease. This page is about the first.
In air conditioning ductwork, dust and microbial growth are removed and what is at stake is air quality. In kitchen ducts, grease is removed and the risk is fire. The procedure, the equipment and the frequency change.
Cleaning kitchen extraction is a different service, with a different procedure, and is not part of this one.
